The xorg.conf man page still says the the default behavior is "off" for the "DontZap" option, but default behavior is in fact "on", and has been for awhile.  (At least, this affects the english language man page, I haven't tried any other languages)

DontZap is off by default, so the manpage seems correct.

DontZap was only on by default for a couple 1.6 releases - it's off again
now, so the man page is correct.   (You may not notice that it's on unless
you've got XKB configured to map the Terminate action, since that's now
off by default - see http://who-t.blogspot.com/2009/04/zapping-server.html )
